Page 221 in The Trouble with Tulip suggests that you stuff an apple inside the chicken before you roast it. It makes the chicken much more moist.
Then you can toss it when you take the chicken out of the oven.
Additional note: this works for turkeys too.

I highly recommend roasting the chicken breast side down. It makes the white meat as tender as the dark meat. I do it myself with great results and have passed the tip on to others - they have loved it! This can also work if you are doing a whole chicken in a roaster or slow cooker. My sister skins her chickens at butchering time and had fantastic results roasting them breast side down even without the skin. It got rave reviews recently!
